Penelitian bertujuan untuk mengetahui umur simpan biskuit dari campuran tepung labu siam (Sechium edule) dan kacang hijau (Vigna radiata). Sampel yang digunakan dalam penelitian ini adalah terbuat (Vignaradiata). dilaksanakan pada bulan Juni-September 2020 diawali dengan pembuatan formulasi hijau. Analisis data pendugaan menggunakan metode Arrhenius. Hasil ASLT. Berdasarkan hasil diperoleh, (Vignaradiata) paling tinggi diperoleh 100% suhu 25 oC selama 177 hari.
